
As we all know, preparing lunches can often feel like a mundane task, but it doesn’t have to be!
Here is everything I made for my husband’s easy lunchbox this week. Each day, I set out to make a delicious and nutritious easy lunchbox that not only satisfied my husband’s taste buds but also fueled his body for the rest of the day.
Food has always been my love language, so I’ve been packing my husband’s weekly lunchboxes for five years. It is my simple gesture to put together a week’s worth of easy lunchbox so my husband has something to look forward to every day at his job.

MONDAY: BEEF AND BROCCOLI FRIED RICE
I AM NOT KIDDING when I tell you that my husband DEVOURED bowls of this delicious savory Beef and Broccoli Fried Rice.
Simple, easy, and delicious Black Pepper Beef and Broccoli Fried Rice with many secret tips on making tender beef every single time. Who doesn’t love a delicious and easy one-pot dinner?
Here are a few secrets to SUPER TENDER Beef every single time!
#1 The first one is baking soda. I got this secret from a good friend who works at a Chinese restaurant; it is honestly a game-changer. No more eating tough beef at home, and hello to juicy, tender, silky beef!
#2 The second tip is cutting against the grain and diagonally. Always cut against the grain and sideways to get thin slices. With this tip, it doesn’t matter what type of steak you get; it will turn out perfect every time!
#3 The final tip is to freeze the beef for 30 minutes before slicing it. This step will make it 100x easier to cut the meat.
Ingredients
- 1.5 lb of Beef
- 1.5 tsp of Black Pepper
- 2 tbsp of Oyster Sauce
- 1 tsp of Baking Soda
- 3 tbsp of Cornstarch
- 2 tbsp of Oil
- 2 cups of Broccoli
- 3-4 cups of Rice (cooked and cooled)

TUESDAY: Coca-Cola Chicken Thigh

A classic childhood recipe that is super easy to make at home and is finger-licking good is, Coca-Cola Chicken Thigh. The chicken is tender, and the glaze is a perfect balance between sweet and savory.

WEDNESDAY: THE PERFECT MEAL

Recipe #3: Stir-Fried Garlic Green Beans (3 Ingredients ONLY!)

THURSDAY: Shanghai Noodles (Easy)
Shanghai Noodle Stir-fry is a quick and versatile dish that is easy to make at home! You can customize it with any vegetables and protein of your choice.
If you can’t find Shanghai Noodles, you can also swap with Udon noodles, and it will be just as delicious!
Ingredients
- 1 lb of Pork sliced thinly (I used Pork Lion or Pork Belly)
- 2 tbsp of Soy Sauce
- 1 tsp of White Pepper
- 1 tbsp of Cornstarch
- ½ Cabbage sliced
- ½ Carrot, sliced
- 8 Shiitake Mushroom sliced
- 2 packs of Shanghai Noodles (400g)
